But if you walk into the wrong place and order a bourbon, you'll get a perfunctory pour from a dusty bottle on a back shelf and you'll wonder what all the fuss is about.

First, a quick note on bourbon in Spain

That last part matters. The Van Winkle collection is among the hardest bourbon to find anywhere in the world. We're one of the very few places in Spain where you can taste all expressions side by side.

 

The bar's philosophy is simple: classics made correctly. The Old Fashioned here is not a novelty. It's built with discipline — the right glass, the right dilution, the right ice, and customised to the bourbon or rye you choose. Pick a wheated expression like W.L. Weller and you get something soft, round, and vanilla-forward. Switch to a high-rye like Bulleit Rye and the whole character of the cocktail shifts.

Where The Original Old Fashioned is focused and precise — bourbon, rye, classic builds — NOLA is looser and more Southern in spirit. Think signature cocktails inspired by Louisiana, craft drinks with a twist, and a small menu of soul food dishes and American sandwiches that make it as much a place to eat as to drink.

 

The signature Hurricane is the obvious order if you want something distinctly New Orleans. But the bar team at NOLA comes from the same world as The Original Old Fashioned — they know their way around bourbon — so a well-made classic is never far away.

 

If you're spending an evening in Gràcia, the natural move is to start at NOLA for dinner and drinks, then walk next door to The Original Old Fashioned for a serious bourbon session to finish the night. Both teams know each other well, and the two bars work together as a natural pairing.

Wheated bourbon — Uses wheat as the secondary grain instead of rye. Result: softer, rounder, more vanilla and caramel. Examples: Pappy Van Winkle, W.L. Weller, Maker's Mark.

 

High-rye bourbon — More rye in the mash bill, which adds spice, structure, and a drier finish. Examples: Bulleit, Four Roses Single Barrel, Knob Creek.

 

Straight bourbon — Aged at least two years with no additives. The baseline quality marker.

 

Small batch / Single barrel — Small batch means blending a limited number of barrels for consistency; single barrel means each bottle comes from one specific cask, so flavour can vary between bottles. Both tend to be higher quality expressions.

 

Age statement — The number of years in the barrel. More age usually means more complexity, but the relationship isn't linear — climate, warehouse position, and entry proof all matter too.

Practical tips for your visit

 

When to go: Barcelona's bar scene runs late. Most cocktail bars are quiet before 9pm and start filling up around 10–11pm. If you want a conversation with your bartender, which is worth having if you're serious about bourbon — arrive earlier in the evening.
